The heart of the best vineyards of Jerez Superior is the Viña La Constancia winery, with
an area of 25 hectares developed around the Cerro Santiago, an underpayment of the
Pago de Macharnudo Bajo. The establishment of the first winery and the planting of
the vineyard took place in 1969. It has the white grape varieties Palomino Fino (native
to the region) and Pedro Ximénez.
The Albariza areas have a spongy structure, are easy to work and have a deep subsoil that
is conducive to the roots of the vines to explore and extract their water reserves in the
dry months.
Its richness in calcium carbonate, its white color, the moderate temperature and the action
of the winds (east and west), together with the careful care of the human hands,
create an ideal environment for the growth of grapes and the production of some
grapes unique in the world.
The construction of the wineries for biological aging and oxidative aging took place in
1975, since then this family winery has been producing quality craft wines, the result
of the persistence of the good work of the Martín Rubio family.
In the beginning, the winery only had 20 American oak barrels. Currently it has more than
800 barrels and a wide range of wines: Fino, Amontillado, Palo Cortado, Oloroso,
Cream and Pedro Ximénez and Moscatel sweets. Without forgetting the excellent aged
vinegars.
The San Nicolás winery was the first to be built and bears the name of the founder, the van
Nicolás Martín. Initially it was used as an aging cellar, later as a must-restaurant and
currently serves as a space for events and celebrations with a capacity for 120
people.
The Bodega Viña La Constancia has been closed to tourists for years and will be opened
in May 2016 with an original initiative called “Vino amp; Flamenco en Viña La
Constancia “reopened. A perfect blend of the gastronomy of the region, the wines of
the winery, the magic and the flamenco duende of the master Joaquín Pareja-
Obregón.
The UNESCO-listed Instituto Cultural Cabañas (formerly Hospicio Cabañas) is located in the historic core of the city center and is a magnificent neoclassical former hospital and orphanage, home to the disabled and orphans for more than 150 years, which began at the beginning of the 19th century was built.
Today the complex is home to the Cabañas Cultural Institute and the Heritage of Humanity. In addition to the graceful architecture of the building, based on similar designs in Paris and Madrid, the main focus here is the collection of 57 magnificent frescoes by José Clemente Orozco, which are widely regarded as his most beautiful works. Most of the murals adorn the ceiling and walls around the huge nave and dome, including his famous mural The Man of Fire (El Hombre del Fuego).
